What you need

Olive oil
Lemon (~1/4 per 3 beets)
Salt (~1/2 tspn per 3 beets)

How to do it

Preheat oven to 450. Peel beets with a potato peeler. Cut into cubes, maybe 1/2". Drizzle with olive oil and wrap in aluminum foil. Cook for 40 minutes. Remove from heat, dump all into bowl, add salt and lemon juice.
